This could be a snack, sandwich fill, or even a side dish for rice or breads.

  1. Take a pack of button mushrooms — let us say, 8–10 medium sized ones.
  2. How to wash — Wash them thrice in water, without leaving them in water not for more than 5 seconds everytime; this is because they absorb water quickly and might get watery.
  3. Drain and slice them nice.
  4. Put the slices in a bowl, add half a spoon salt, pepper and chilly powder.
  5. Now close the bowl with a lid and shake it twice or thrice. Leave it for 10–15 minutes.
  6. Now, take a pan/kadai and heat it.
  7. Add a spoon or two of less flavoured oil and let it warm. Optionally, you can add diced 4–5 garlic pieces if you like the flavour.
  8. Add the mushroom slices and sautee them for 5 minutes on medium flame, then add two tbsps of water and close the lid and cook it for 5–7 minutes on simmer.
  9. Open the lid, carefully taste a big enough slice and see if it’s cooked. If not cooked, cook for another 5 minutes.
  10. Yay! There you go! Sprinkle and mix more salt and pepper if you need and garnish with herbs if you may.
